On Thursday 21 September, at 7 p.m., we will talk about ‘Inclusion and sustainability’ with Michelin-starred chef Viviana Varese (Salerno, 1974).

Founder in 2007 of Alice Ristorante in Milan, with which she obtained her first Michelin Guide Star in 2011, later transferred to Eataly Smeraldo, also in Milan, Viviana Varese has never stopped experimenting in the kitchen, both at a methodological level and in her choice of products. Viviana Varese’s dishes lead to the discovery of the flavours of the sea and the land, combining top quality ingredients for the pleasure of sight and palate. In February 2022, Viviana Varese has opened Io sono VIVA Dolci e Gelati, an artisan ice-cream and small pastry shop format in Milan with an all-female team selected in collaboration with CADMI, the Casa di Accoglienza delle Donne Maltrattate (House Care for Abused Women) in Milan. The aim of the project is to restore dignity and economic independence to these people through work.
